Bean Salad Politiko Style
|Parsley||1⁄2 Cup (8 tbs), chopped|
|Navy pea beans||1⁄2 Pound|
|Olive oil||1 Cup (16 tbs)|
|Lemons||2 , juiced|
|Onions||2 , thinly sliced|
|Celery stalks||3 , diced|
|Water||1 Cup (16 tbs) (Adjust Quantity As Needed)|
Soak beans overnight; drain.
Cover with fresh unsalted water, bring to a boil, and cook beans until soft.
Place beans in a large bowl and add onions, olive oil, lemon juice, salt and pepper, celery, and parsley.
Mix well and serve at room temperature or slightly chilled.
