Wilted Spinach Bacon Salad

  Red onion 1⁄2 Large, coarsely chopped
  Water 1⁄4 Cup (4 tbs)
  Black pepper 1⁄8 Teaspoon
  Vinegar 2 Tablespoon
  Sugar 3 Tablespoon
  Fresh spinach leaves 6 Ounce, cleaned and torn into bite sized pieces
  Turkey bacon slices 8 , cut into 1 inch pieces (Louis Rich)

Place spinach leaves in large serving bowl; set aside.
Combine Turkey Bacon and onion in large nonstick skillet.
Cook over medium heat 8 to 10 minutes or until bacon begins to brown, stirring occasionally.
In small bowl, combine remaining dressing ingredients; stir into Turkey Bacon mixture.
Reduce heat to low and simmer 3 minutes.
Pour over spinach leaves and toss.
