Cottage Lime Salad
|Boiling water||3 Cup (48 tbs)|
|Lime gelatin||2 Tablespoon, flavored (2 Packages)|
|Pineapple juice||1 Cup (16 tbs)|
|Creamed cottage cheese||2 Cup (32 tbs)|
|Minced onion||1 Teaspoon|
|Minced green pepper||1 Teaspoon|
|Coarsely chopped cucumber||1⁄2 Cup (8 tbs)|
|Coarsely chopped celery||1⁄2 Cup (8 tbs)|
Pour boiling water on gelatin in large bowl; stir until gelatin is dissolved.
Stir in pineapple juice, vinegar and salt.
Pour 1 cup of gelatin mixture into 8 cup ring mold.
Chill until firm.
While bottom layer chills, chill remaining mixture until thickened slightly but not set; beat with rotary beater until light and fluffy.
Mix in remaining ingredients; pour on gelatin layer in mold.
Chill until firm; cover.
