Chicken And Mango Pasta Salad
|Large shell pasta||500 Gram|
|Cooked chicken||1 , flesh cut into bite sized pieces|
|Water chestnuts||220 Gram, sliced|
|Mangoes||440 Gram, sliced|
|Low fat mayonnaise||1 Cup (16 tbs)|
|Sweet mango chutney||1⁄2 Cup (8 tbs)|
|Spring onions||2 , finely chopped|
|Coriander||2 Tablespoon, chopped|
|Freshly ground black pepper||To Taste|
Cook pasta in boiling water in a large saucepan.
Drain, rinse under cold running water and drain again.
Place pasta, chicken, water chestnuts and mangoes in a bowl and toss to combine.
To make dressing, place mayonnaise, chutney, spring onions, coriander and black pepper to taste in a bowl and mix to combine.
Spoon dressing over salad and toss to combine.
Cover and chill until required.
