Sunset Yogurt Salad
|Sugar free orange gelatin/Sugar free lemon gelatin||2 Tablespoon (2 Packages, 4 Serving Size Or 1 Package Jell O Brand)|
|Boiling water||2 Cup (32 tbs)|
|Low fat plain yogurt||8 Ounce|
|Cold water||1⁄4 Cup (4 tbs)|
|Canned crushed pineapple in unsweetened juice||8 Ounce, undrained (1 Can)|
|Shredded carrots||1 Cup (16 tbs)|
Completely dissolve gelatin in boiling water.
Measure 1 cup gelatin into medium mixing bowl; chill until slightly thickened.
Stir in yogurt.
Pour into medium serving bowl.
Chill until set but not firm.
Add cold water to remaining gelatin.
Stir in pineapple with juice and carrots.
Chill until slightly thickened.
Spoon over gelatin-yogurt mixture in bowl.
Chill until firm, about 4 hours.
Garnish with carrot curl, celery leaf and pineapple slice, if desired.
