Southwest Express Chicken Salad is a fabulous summer recipe. The colorful and appealing  look  make Southwest Express Chicken Salad extremely appetizing. Try out his healthy salad at home.
  Onion 1 Medium, cut into 1/4 inch wedges
  Olive oil/Vegetable oil 1 Tablespoon
  Cooked chicken/Cooked turkey 3 Cup (48 tbs), shredded or diced
  Picante sauce 2⁄3 Cup (10.67 tbs) (Pace Brand)
  Tomatoes 2 Medium, diced
  Ground cumin 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Dried oregano leaves 1⁄2 Teaspoon, crushed
  Shredded lettuce 5 Cup (80 tbs)
  Chopped cilantro 1⁄4 Cup (4 tbs), chopped

In large skillet, cook and stir onion in hot oil until onion is tender but not brown.
Add chicken, 2/3 cup Pace® Picante Sauce, tomatoes, cumin, salt and oregano; simmer 5 minutes, stirring occasionally.
Arrange lettuce on 4 dinner plates or large platter; top with hot chicken mixture.
Sprinkle with cilantro.
