Herbed Seafood Salad

Ingredients
  Cooked scallops 24
  Garlic 1 Clove (5 gm), lightly crushed
  Vinegar 50 Milliliter
  Red chili 1 , seeded and finely sliced
  Orange juice 3 Tablespoon
  Freshly squeezed lime juice 50 Milliliter
  Cooked king prawns 24 , deveined
  Green pepper 1⁄4 , cut into fine strips
  Stuffed green olives 60 Gram, halved
  Chopped fresh coriander 2 Tablespoon
  Sunflower oil 125 Milliliter
Directions

Combine scallops and prawns in a bowl.
Add vinegar, lime juice, orange juice and garlic.
Mix well, cover and chill for 2 hours.
Strain seafood mixture, reserving marinade.
Place seafood in a salad bowl and add chilli, green pepper, olives and coriander.
Toss.
Add oil to reserved marinade and whisk well.
Pour dressing over salad and toss lightly.
Garnish with lemon slices.
