Light Summer Salad

Ingredients
  Onions 2
  Green peppers 2 Small
  Fennel 125 Gram
  Courgettes 250 Gram
  Tomatoes 8
  Celery stick 1
  Avocados 2
  Oregano sprigs 2 (For Garnish)
  Olive oil 2 Tablespoon
  Tomato puree 2 Tablespoon
  Lemon juice 1
  Chopped fresh oregano 1 Teaspoon
  Chopped fresh thyme 1 Teaspoon
  Garlic 2 Clove (10 gm), finely chopped
  Tomatoes 4 , peeled and chopped
Directions

Make the dressing.
Puree tomatoes with tomato puree, lemon juice, herbs and garlic in a blender or food processor.
With motor running, gradually add the oil.
Leave to stand at room temperature for 1 hour.
Slice onions, peppers and fennel into very thin rings.
Place in a salad bowl.
Slice courgettes, tomatoes, celery and avocados thinly; add to the bowl.
Pour dressing over salad, toss lightly and serve, garnished with oregano sprigs.
