Tofu Salad

This recipe is delicious. Creamy and tangy, it’s perfect on a spoon to feed baby or as a spread on a sandwich.
Ingredients
  Tofu 1 Cup (16 tbs), rinsed and drained
  Celery stalk 1 Large, chopped finely
  Baby carrots 1⁄2 Cup (8 tbs), chopped
  Veganaise 1 Tablespoon (Mayonnaise or Yogurt)
  Lemon juice 1⁄2 Teaspoon
  Turmeric 1⁄8 Teaspoon
  Mustard 1 Teaspoon
Directions

GETTING READY
1. Wrap tofu in a towel and put something heavy on it to drain water.

MAKING
2. In a steamer pot, cook carrots.
3. Add the celery and cook.
4. In a food processor, blend vegetables and tofu.

SERVING
5. Serve with pasta.
