|Dried tamarind||225 Gram|
|Chili powder||1 Teaspoon|
|Green chilies||2 , thinly sliced|
|Ginger root piece||2 1⁄2 Centimeter, peeled and cut into fine strips|
|Ginger root piece||1 Inch, 2.5 centimeters, peeled and cut into fine strips|
|Apple||1 , cut into small pieces|
|Pear||1 , cut into small pieces|
|Banana/Guava||1 , cut into small pieces|
|Mango||1 , cut into small pieces|
|Fruit||1 , cut into small pieces (Of Your Choice)|
Put the tamarind in a bowl, cover with boiling water and set aside for 3 hours or overnight.
Tip the tamarind and water into a sieve placed over a saucepan and, using your fingers, push through as much pulp as possible.
Discard the husk and seeds.
Add the chilli powder, sugar to taste and simmer gently for 15-20 minutes.
Pour into a bowl and set aside to cool.
Stir in the chillies, (For a savoury accompaniment use ginger and fruit).
Cover and chill before serving.
