Mixed Sausage And Potato Salad
|Potatoes||1 Kilogram, unpeeled|
|Beef stock||1 Liter|
|Smoked sausage||500 Gram (Use Ready To Serve)|
|Salad oil||250 Milliliter|
|Bratwurst||500 Gram, cooked|
|Spring onions||6 , finely sliced|
|Dry white wine||50 Milliliter|
|White wine vinegar||50 Milliliter|
|Garlic||1 Clove (5 gm), crushed|
|Freshly ground black pepper||To Taste|
|Snipped chives||6 Tablespoon|
|Radishes||6 , thinly sliced|
In a large saucepan, cook the potatoes in the beef stock until just tender.
Drain, cool slightly, peel and cut into 5mm slices.
Slice the sausages 5mm thick.
Place in a large salad bowl with the potatoes and spring onions.
Whisk the wine, vinegar and garlic together in a small bowl.
Gradually whisk in the oil; add salt and pepper to taste.
Pour over the salad and toss thoroughly.
Garnish with the chives and radishes just before serving.
