This potato salad is a simple yet satifying salad made with eggs and vegetables. Prepared with mashed eggs and potatoes, the potato salad is flavored with mustard and is ready to be served with meals of choice. Filling and nice!
|Potatoes||8 Medium, peeled|
|Prepared mustard||4 Tablespoon|
|Hard boiled eggs||6|
|Chopped onion||1 Cup (16 tbs)|
|Chopped celery||1 Cup (16 tbs)|
|Chopped bell pepper||1 Cup (16 tbs)|
Boil potatoes in plain water until soft enough to mash with hand masher.
Mash in mixing bowl.
Mash 5 eggs; add eggs, mustard, onion, celery and bell pepper.
Mix well and smooth top.
Slice 1 egg and use for garnish on top of salad.
