  Raw rice 1 Cup (16 tbs)
  Salad oil 1⁄4 Cup (4 tbs)
  Wine vinegar 1 Tablespoon
  Freshly ground black pepper To Taste
  Water chestnuts 6 , sliced
  Minced parsley 1⁄4 Cup (4 tbs)
  Minced onion 1⁄4 Cup (4 tbs)
  Lettuce 1
  Black olives 8
  Mayonnaise 2 Tablespoon
  Salt To Taste

1. Cook the rice until tender.
2. Add the oil, vinegar, salt and pepper and cool. Add the water chestnuts, parsley and onion and mix gently. Add more oil and vinegar to taste.
3. Arrange on lettuce and garnish with black olives.
