Garbanzo Bean Salad
|Olive oil||2 Tablespoon|
|Cider vinegar||4 Tablespoon|
|Garbanzo beans||1 Cup (16 tbs), cooked|
|Parsley||2 Tablespoon, chopped|
|Celery||1 Cup (16 tbs), chopped|
|Green onion||2 Tablespoon, sliced|
|Pimiento||1⁄4 Cup (4 tbs)|
|Lettuce||1 , chopped (For Garnish)|
|Green pepper ring||1⁄4 Cup (4 tbs) (For Garnish)|
|Pimento||1⁄4 Cup (4 tbs) (For Garnish)|
Combine oils, vinegar and salt in a small bowl; mix well with fork to make marinade.
In large bowl, combine garbanzo beans, parsley, celery and green onion.
Pour marinade over mixture and toss lightly.
Stir in chopped pimiento and refrigerate for at least two hours before serving.
