Chicken Salad

Chicken Salad is a delicious side dish recipe which I always love to have on my dinner table. I bet, once you have this Chicken Salad, you will always crave for some more.
  Cooked chicken 4 Cup (64 tbs), cooled and cut into 0.5 inch dice
  Salt 1 Teaspoon
  Freshly ground black pepper To Taste
  Finely chopped onion/Scallions 3 Tablespoon
  Finely chopped celery 1⁄2 Cup (8 tbs) (Including Some Of The Leaves)
  Capers 3 Tablespoon, washed, drained and coarsely chopped
  Freshly made mayonnaise/Good, unsweetened commercial variety 1 Cup (16 tbs)
  Sour cream 1 Cup (16 tbs)
  Finely chopped parsley 1 Tablespoon

Combine the chicken, salt and a few grindings of black pepper in a large mixing bowl.
Stir in the onion or scallions, the celery and the capers.
Mix together the mayonnaise and sour cream, and carefully fold it into the chicken mixture.
Taste for seasoning.
