|Cooked chicken||4 Cup (64 tbs), cooled and cut into 0.5 inch dice|
|Freshly ground black pepper||To Taste|
|Finely chopped onion/Scallions||3 Tablespoon|
|Finely chopped celery||1⁄2 Cup (8 tbs) (Including Some Of The Leaves)|
|Capers||3 Tablespoon, washed, drained and coarsely chopped|
|Freshly made mayonnaise/Good, unsweetened commercial variety||1 Cup (16 tbs)|
|Sour cream||1 Cup (16 tbs)|
|Finely chopped parsley||1 Tablespoon|
Combine the chicken, salt and a few grindings of black pepper in a large mixing bowl.
Stir in the onion or scallions, the celery and the capers.
Mix together the mayonnaise and sour cream, and carefully fold it into the chicken mixture.
Taste for seasoning.
