Green Salad With Almonds And Orange Dressing

  Red leaf lettuce head 1 Large, washed, dried and chilled
  Bermuda onion 1 Medium, sliced into rings
  Oranges 2 , peeled and thinly sliced (One 11 Ounce Can Mandarin Oranges, Drained)
  Jicama 1 Small, peeled and cut into julienne strips
  Sliced almonds 4 Ounce
  Sugar 3 Tablespoon
  Grated orange peel 1⁄2 Teaspoon
  Fresh orange juice 1⁄3 Cup (5.33 tbs)
  Red wine vinegar 2 Tablespoon
  Vegetable oil 1⁄2 Cup (8 tbs)
  Sugar 2 Tablespoon
  Dry italian dressing mix 1 Tablespoon (Use Good Seasons)

Place first 4 ingredients in a salad bowl; chill.
In a small skillet, sprinkle 3 tablespoons sugar over the almonds and cook over medium heat until almonds are coated and sugar has dissolved.
(They brown quickly; do not burn.) Place in a small bowl and allow to cool.
Dressing: Mix dressing shaker jar; chill.
Pour salad dressing over chilled salad and sprinkle sugared almonds over all.
Toss and serve.
