Tuna Tomato And Zucchini Mold
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Water||1⁄4 Cup (4 tbs)|
|Tomatoes||4 Medium, diced|
|Dehydrated onion flakes||2 Tablespoon|
|Garlic||1⁄4 Clove (1.25 gm), minced|
|Chopped parsley||2 Tablespoon|
|Dried oregano leaves||1⁄4 Teaspoon|
|Shredded scrubbed raw zucchini||1 Cup (16 tbs)|
|Tuna||8 Ounce, drained and flaked|
In small saucepan sprinkle gelatin over water.
Place saucepan over low heat and stir until gelatin is fully melted and tomatoes are soft, about 3 minutes.
Remove from heat; add onion flakes, garlic, parsley, oregano and salt.
Chill until mixture is thickened.
Fold in raw zucchini and tuna.
Turn into a quart-size mold.
Chill 3-4 hours or until firm.
