Hot Shrimp Luncheon Salad

Ingredients
  Vegetable oil 2 Tablespoon
  White wine tarragon vinegar 4 Teaspoon
  Italian salad dressing mix 1 Teaspoon
  Cooked peeled shrimp 1 Cup (16 tbs)
  Chopped tomato 2 Tablespoon
  Chopped celery 1 Tablespoon
  Chopped green onion 1 Tablespoon
  Drained capers 1 Teaspoon
  Shredded lettuce 1
  Shredded cheddar cheese 1 Ounce (1 Ounce)
  Chopped parsley 1 Tablespoon
Directions

1. In a screw-top jar, combine oil, wine vinegar and Italian dressing mix; cover and shake well.
2. In a 1 quart bowl, combine shrimp, tomato, celery, green onion and capers. Drizzle dressing over shrimp mixture; toss gently. Microwave at 30% ( medium low ) 3 to 4 minutes or until warm; toss after 1-1/2 minutes.
3. Place lettuce on salad plates. Spoon warm shrimp mixture over lettuce. Sprinkle with cheese and parsley.
