Moulded Potato Salad
|Boiled skinned and diced potatoes||2 Cup (32 tbs)|
|Finely chopped celery||1 Cup (16 tbs)|
|Finely chopped capsicum||1 Teaspoon|
|Finely chopped chili||1|
|Finely chopped onion||1 Small|
|Mayonnaise||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Mixed boiled vegetables||1 Cup (16 tbs)|
Combine all the ingredients together except 2 tsp of mayonnaise, gelatine and water.
Soften gelatine in cold water and then, over a pan of hot water, melt it.
Blend in with the combined ingredients and chill in a refrigerator until firm.
Unmould on lettuce leaves and fill the centre cavity with boiled vegetables and put a blob of mayonnaise (2 tsp) on top.
