Cucumber Crown Salad
|Lemon gelatin||3 Ounce (1 Package)|
|Apple juice||1 3⁄4 Cup (28 tbs), heated|
|Lemon juice||2 Tablespoon|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Grated carrots||1 Cup (16 tbs)|
|Diced celery||1⁄4 Cup (4 tbs)|
|Peeled and diced cucumber||1⁄4 Cup (4 tbs)|
Dissolve gelatin in hot apple juice; chill.
When gelatin mixture begins to congeal, add lemon juice and mayonnaise; mix well.
Add carrots, celery, cucumber, and salt; mix well.
Pour into a 5 cup mold.
Chill until firm.
Unmold and garnish with tomato slices and asparagus spears.
