Fruited Rice Salads
|Diced celery||1⁄2 Cup (8 tbs)|
|Minced onion||1⁄4 Cup (4 tbs)|
|Grated orange rind||2 Teaspoon|
|Orange juice||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Poultry seasoning||1⁄2 Teaspoon|
|Long grain rice||1 Cup (16 tbs)|
|Golden raisins||1⁄3 Cup (5.33 tbs)|
Heat butter in medium-size saucepan; saute celery and onion until tender.
Stir in orange rind, juice, water, seasoning, rice, and raisins.
Bring to boil; stir well.
Reduce heat; cover.
Simmer until liquid is absorbed and rice tender, about 30 minutes.
Remove from heat.
When cool, refrigerate several hours.
