Cherry Jubilee Salad
|Pitted dark sweet cherries||1 Can (10 oz), drained, liquid reserved|
|Currant jelly||1⁄2 Cup (8 tbs)|
|Sherry||1⁄2 Cup (8 tbs)|
|Black cherry flavored gelatin||3 Ounce (1 Package)|
|Lemon juice||4 Tablespoon|
|Chopped pecans||1⁄2 Cup (8 tbs)|
Combine cherry liquid, jelly, and sherry in saucepan; bring to a boil and stir until jelly has melted.
Pour over gelatin and stir until gelatin has dissolved.
Cool slightly and add lemon juice and cherries.
Chill until partially set; stir in pecans.
Chill until firm.
