Squid And Shrimp Salad
|Squid tubes||8 Ounce|
|Olive oil||2 Tablespoon|
|Lemon||1 (Juiced Plus Grated Peel)|
|Minced basil||1 Tablespoon|
|Garlic||2 Clove (10 gm), pressed|
|Tomatoes||2 Medium, diced|
|Cooked shrimp||4 Ounce|
|Grated cheese||1 Ounce (Asiago Or Parmesan)|
Rinse squid tubes well, inside and out.
In a large pan, bring salted water to boil.
Drop in squid and cook for 1 to 2 minutes until opaque and curling.
Drain well and reserve.
Blend oil, lemon juice, 1 teaspoon lemon peel, basil, and garlic in a bowl.
Add tomatoes and their juice.
Slice the cooled squid into 1/2 inch rings.
Add squid and shrimp to dressing and toss.
Sprinkle cheese over all, chill or serve at once.
