Avocado Pineapple Salad
|Lime gelatin||1 Tablespoon|
|Crushed pineapple||1 Can (10 oz) (Drained Liquid Reserved)|
|Mayonnaise||3⁄4 Cup (12 tbs)|
|Whipping cream||1⁄2 Pint, whipped|
|Avocado||1 , mashed|
|Chopped nuts||1 Tablespoon|
Prepare gelatin according to package directions, using juice drained from pineapple as part of the liquid.
Chill until mixture is texture of unbeaten egg white.
Fold in pineapple, mayonnaise, whipped cream, avocado, and nuts, if desired.
Put into a 1 quart mold and chill until firm.
