My hearty and healthy quinoa salad with beets, arugula, spinach, carrot and cashew nuts in a garlic lemon vinaigrette dressing.

  Baby arugula To Taste
  Baby spinach To Taste
  Carrot 1
  Cashew nuts To Taste
For dressing
  Lemon 2 , juiced
  Rice vinegar 3 Tablespoon
  Olive oil 3 Tablespoon
  Agave/Honey 1 1⁄2 Tablespoon
  Garlic cloves 2 , mince
  Salt 1 Teaspoon
  Pepper 1 Teaspoon
