Green pea salad with goat cheese and mint salad is a classic pea salad.
Shelled peas | 1/2 Pound ((about 2 cups, frozen or fresh)) | |
Celery stalk | 1 , finely diced | |
Fresh minced mint | 1 Teaspoon | |
Fresh minced parsley | 2 Tablespoon | |
Salt | 1/4 Teaspoon | |
Lemon juice | 1 Teaspoon | |
Crumbled goat cheese | 1/2 Cup (8 tbs) |
MAKING:
In a colander, place peas and pour boiling water over it. Allow to drain.
In a large bowl, combine celery stalk, minced mint, parsley, salt, lemon juice, goat cheese and mix well.
Combine goat cheese mixture with peas.
