Molded Beet Salad

Ingredients
  Unflavored gelatin 1 Tablespoon
  Cold water 1⁄4 Cup (4 tbs)
  Diced beets 3⁄4 Cup (12 tbs), drained (Liquid Reserved)
  Mandarin oranges 1 Cup (16 tbs), drained (Liquid Reserved)
  Salt 1⁄4 Teaspoon
  Minced onion 3 Tablespoon
  Lemon juice/Vinegar 1⁄4 Cup (4 tbs)
  Lettuce 3
  Mayonnaise 2 Tablespoon
  Celery salt To Taste
Directions

Soften gelatin in cold water for 5 minutes.
Combine beet and orange liquid and add enough water to make 1 1/4 cups.
Heat liquid to boiling and add gelatin; then add salt, onion, and vinegar or lemon juice (or combination of the two).
Chill.
When mixture is slightly thickened, fold in beets and oranges.
Pour into 6 individual molds and chill until firm.
Unmold on lettuce and serve with mayonnaise with dash of celery salt.
