Peach Perfection Salad
|Canned cling peach halves||56 Ounce (Two 28 Ounce Can)|
|Curry powder||1 Teaspoon|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Cooked chicken||2 Cup (32 tbs), cubed|
|Diced celery||2 Cup (32 tbs)|
|Chopped pimento||1⁄2 Cup (8 tbs)|
|Mayonnaise||1⁄4 Cup (4 tbs)|
Early in the morning (or the day before) drain the peaches.
Heat syrup with curry powder, brown sugar and vinegar.
Add peach halves and simmer 5 to 8 minutes.
Chill for several hours, or overnight.
Combine balance of ingredients - mix lightly and chill.
Drain the peaches and place 1 or 2 on lettuce leaves.
Fill with chicken salad and garnish with more mayonnaise, if desired.
