Salmon Salad Recipe - My Favorite Picnic Food

This Salmon Salad is one of my brother's favorite recipes, it's so good! Fresh cooked salmon with crunchy celery, fresh dill and parsley, scallions, and a zesty lemony dressing with smoked paprika and cayenne. Great picnic food!

Ingredients

Salmon 2 Pound
Sliced scallions 1/4 Cup (4 tbs)
Chopped fresh dill 1/4 Cup (4 tbs) ((loosely packed))
Chopped celery 1/4 Cup (4 tbs)
Chopped parsley 1/4 Cup (4 tbs)
Mayonnaise 4 Tablespoon
Smoked paprika 1/4 Teaspoon
Cayenne pepper 1/4 Teaspoon
Lemon juice 2 Tablespoon
Dijon mustard 1 Teaspoon
Salt and pepper To Taste

Directions

Making

Cook in a skillet, which takes about 5-10 minutes depending on the thickness of the salmon (It can also be grilled, poached or baked)

When the salmon is cooked through to 140 degrees F, flake the salmon with a fork (discard the skin, if the salmon has skin on it).

In a big bowl, combine the rest of the ingredients and mix well.

Add the salmon to the dressing, and toss.

Taste and check for seasoning.

Serving

Serve warm with water crackers, or pop it into the fridge until fully chilled.
