Garden Vegetable Salad
|Gelatin||3 Ounce (1 Package, Jell-O® Brand Sugar Free Lemon Flavor)|
|Boiling water||1 Cup (16 tbs)|
|Cold water||3⁄4 Cup (12 tbs)|
|Sliced radishes||1⁄2 Cup (8 tbs)|
|Sliced scallions||1 Tablespoon|
Dissolve gelatin and salt in boiling water.
Add cold water and vinegar.
Chill until slightly thickened.
Stir in radishes and scallions.
Pour into individual molds.
Chill until firm, about 3 hours.
Garnish with escarole, sliced hard-cooked eggs and whole radishes, if desired.
