The Best Raw Beet Jicama Salad with Spicy Lime Dressing

Watch Dr. Ruby make a raw beet and jicama salad with a tangy lime dressing! The Veggie Chest is a whole foods, vegan cooking demonstration series hosted by Dr. Ruby Lathon.
Ingredients
  Beet 3 , peeled and shredded
  Jicama 1 Medium, peeled
  Lime juice 1⁄4 Cup (4 tbs)
  Brown rice vinegar 1 Teaspoon
  Raw agave nectar 2 Tablespoon
  Cayenne pepper 1 Pinch
  Mint leaves 1⁄4 Cup (4 tbs), bruised
  Raw sunflower seeds 1⁄4 Cup (4 tbs) (For Garnish)
Directions

MAKING

1. Wisk together lemon juice, brown rice vinegar and agave nectar to make the dressing. Add a pinch of cayenne pepper and mix that in.

2. Drop peppermint leaves into the dressing and blend that in.

3. Mix beets and jicama in a big bowl. Add the dressing on top and mix it all together.

SERVING

4. Top with sunflower seeds and serve.
