Watercress, Celeriac, And Chicory Salad

Ingredients
  Watercress 10 1⁄2 Ounce, stems removed (3 Bunches)
  Celeriac 1 Small, peeled and cut in thin julienne strips
  Endive heads 2 , divided into leaves
  Chopped parsley 1 Tablespoon
  Finely chopped onion 1 Tablespoon
  Finely chopped cornichons 1 Tablespoon
  Chopped capers 1 Tablespoon
  Finely chopped garlic 1⁄2 Teaspoon
  Dijon mustard 1⁄2 Teaspoon
  Lemon juice 1 Teaspoon
  Red wine vinegar 1 1⁄2 Teaspoon
  Olive oil 2 Tablespoon
  Freshly ground black pepper To Taste
  Salt To Taste
Directions

Prepare the vegetables and combine them in a salad bowl.
Mix together the parsley, onion, cornichons, capers, and garlic with the mustard, lemon juice, and vinegar.
Add the oil, season to taste, and mix well.
Pour the dressing over the vegetables and toss well just before serving.
