Jellied Watercress Consomme
|Condensed consomme||10 1⁄2 Ounce (1 Can)|
|Water||1 Can (10 oz)|
|Unflavored gelatin||1⁄4 Ounce (1 Envelope)|
|Lemon juice||1 Tablespoon (Juice Extracted From 1 Lemon)|
|Watercress||1⁄2 Bunch (50 gm)|
Pour consomme into bowl; stir in water.
Measure 1/4 cup mixture into small saucepan.
Sprinkle gelatin on mixture to soften.
Stir over low heat until dissolved.
Add to mixture in bowl with lemon juice.
Force cress through food chopper, using finest blade.
Add to mixture and chill until almost firm.
Serve in chilled bouillon cups.
