Cumberland Rum Butter

|Soft brown sugar||50 Gram|
|Grated lemon rind/1 pinch each nutmeg and cinnamon||1⁄2 Teaspoon|
Cream the butter thoroughly, beat in the sugar and lemon rind or spices.
Then gradually beat in enough rum to flavour strongly.
Serve with: baked apples or bananas, steamed fruit puddings, mince pies, or use as a cake filling.
