Chocolate Rum Dessert
|Semisweet chocolate morsels||6 Ounce (1 Package)|
|Almond extract||1⁄4 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Light rum||2 Tablespoon|
|Eggs||3 , separated|
|Chocolate curls||1⁄4 Cup (4 tbs)|
|Whipped cream||1 Cup (16 tbs)|
Place chocolate in top of a double boiler.
Bring water to a boil; reduce heat to low.
Cook until chocolate melts.
Beat egg yolks until thick and lemon colored.
Gradually stir one-fourth of chocolate into yolks; add to remaining chocolate, stirring well.
Remove from heat; stir in rum, almond extract, and nutmeg.
Beat egg whites (at room temperature) at high speed of an electric mixer until stiff peaks form; fold into chocolate mixture.
Spoon into cordial glasses or demitasse cups.
Garnish with whipped cream and chocolate curls.
