Peach Rum Sauce
|Canned peach slices||16 Ounce (1 Can)|
|Instant coffee crystals||1⁄2 Teaspoon|
|Vanilla ice cream||1⁄2 Cup (8 tbs)|
Drain peaches, reserving 1/2 cup fruit syrup.
Chop peaches; set aside.
In small saucepan combine sugar, cornstarch, and coffee crystals; stir in reserved syrup.
Cook and stir till thickened and bubbly.
Stir in peaches; heat through.
Remove from heat; stir in rum.
Serve warm sauce over scoops of ice cream.
Cover; store remaining sauce in refrigerator.
