Peach Rum Sauce

This Peach Rum Sauce tastes truly incredible ! Try this delicious ice cream spread over your favorite cakes, puddings and custards. Your suggestions for this Peach Rum Sauce are welcome !
  Canned peach slices 16 Ounce (1 Can)
  Sugar 2 Tablespoon
  Cornstarch 2 Teaspoon
  Instant coffee crystals 1⁄2 Teaspoon
  Rum 1 Tablespoon
  Vanilla ice cream 1⁄2 Cup (8 tbs)

Drain peaches, reserving 1/2 cup fruit syrup.
Chop peaches; set aside.
In small saucepan combine sugar, cornstarch, and coffee crystals; stir in reserved syrup.
Cook and stir till thickened and bubbly.
Stir in peaches; heat through.
Remove from heat; stir in rum.
Serve warm sauce over scoops of ice cream.
Cover; store remaining sauce in refrigerator.
