Ingredients
  Mushrooms 1⁄2 Pound
  Peas 2 Pound
  Butter 3 Tablespoon
  Minced shallots/Green onions 2 Tablespoon
  Dried mint 1 Teaspoon
  Light rum 1 1⁄2 Ounce
  Salt To Taste
  Pepper To Taste
Directions

Shell peas and cook until tender.
Wash mushrooms and slice 1/8 thick.
Melt butter in pan, add mushrooms, onions and mint leaves - saute only till mushrooms are tender and liquid is absorbed.
Add rum - heat and flambe.
When flames subside add peas and stir well.
Heat through and season to taste.
