Exotic Jerk Rub

Ingredients
  Onion 1 , finely chopped
  Habanero 4 , seeded, deveined and minced
  Scallions 1⁄2 Cup (8 tbs), minced
  Thyme 2 Teaspoon
  Salt 2 Teaspoon
  Allspice 1 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Lemon peel 1⁄2 Teaspoon
  Pepper 1 Teaspoon
Directions

MAKING
1) Make a paste by mixing together all the ingredients. The easiest way to make the paste is to process the ingredients in a food processor fitted with a steel blade.

SERVING
2) Serve or use as preferred. Leftover rub can be stored for about a month in a closed jar in the fridge.
