Sauces Rubs Marinades

The barbecued yummy recipe from American cuisine is easy to prepare and this dish can be served as main dish.
  Beef brisket 4 Pound
  Spice rub 3 Tablespoon (Dinosaur Bar-B-Que Cajun Foreplay)
  Basting oil 3 Tablespoon (Wegmans)
  Cubed pineapple 10 Ounce (Fresh, 1 Container, Produce Dept)
  Navel orange 1 , peeled, 1 inch dice
  Bbq sauce 18 Ounce (1 Bottle, Wegmans Tropical)

# Sprinkle beef with Cajun spice (using about 1 1/2 Tbsp on each side); drizzle with basting oil.

# Place in shallow pan; cover with plastic wrap. Chill 10-24 hours.

# Grilling Day: Preheat oven to 375 degrees. Preheat grill on HIGH 10 min.

# Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil.

# Sear brisket on grill 3-4 min, until well browned; turn and sear second side 3-4 min.

# Transfer pineapple and orange to foil pan sprayed with non-stick cooking spray. Top with brisket. Pour BBQ sauce over brisket. Rinse bottle with cup water and pour into foil pan.Cover pan tightly with large piece of foil, sealing well. Roast on center rack of oven 2 hours, shaking pan occasionally throughout cooking time.

# Remove from oven. Use oven mitts to carefully remove foil cover; avoid steam. Skim off excess fat. Transfer brisket to clean serving platter; set aside. Transfer sauce into saucepan and simmer on stovetop 4-5 min, until reduced by one-quarter. (If desired, puree sauce using hand-held type blender.)
8. Carve brisket diagonally into 1/4-inch slices; serve with sauce.

Chef Tip(s):
While simmering sauce, move pan to edge of, but still on, burner. Fat will collect at one side of pan and can easily be skimmed off.
