Homemade Chicken Croquettes

Ingredients
  Butter/Margarine 3 Tablespoon
  Fat 2 Cup (32 tbs) (for deep frying)
  All purpose flour 1⁄4 Cup (4 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Chicken broth 1⁄2 Cup (8 tbs)
  Minced parsley 1 Tablespoon
  Lemon juice 1 Teaspoon
  Grated onion 1 Teaspoon
  Paprika 1 Dash
  Pepper 1 Dash
  Nutmeg 1 Dash
  Salt 1⁄4 Teaspoon
  Finely diced cooked chicken 1 1⁄2 Cup (24 tbs) (Or Canned)
  Fine dry bread crumbs 3⁄4 Cup (12 tbs)
  Beaten egg 1
  Water 2 Tablespoon
Directions

Melt butter; blend in flour; add milk and broth.
Cook and stir till mixture bubbles; cook and stir 1 minute longer.
Add parsley, lemon juice, onion, and seasonings.
Cool.
Add chicken, salt to taste; chill.
With wet hands, shape chicken mixture in 8 balls, a scant 1/4 cup each.
Roll in crumbs.
Shape balls into cones, handling lightly so crumbs remain on outside.
Dip into mixture of egg and water; roll in crumbs again.
Fry in deep hot fat (365°) 2 1/2 to 3 minutes or till golden brown and hot through.
Drain on paper towels; serve with Green Peas in Cream Sauce.
