Potato Salmon Croquettes

Ingredients
  Hot mashed potatoes 1 Cup (16 tbs)
  Fat 2 Cup (32 tbs) (for deep frying)
  Salmon 1 Cup (16 tbs), flaked
  Lemon juice 1 Teaspoon
  Crumbs 1 Cup (16 tbs) (As Required)
  Egg 1 (As Required)
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1.Combine potatoes and salmon
2.Season with salt, pepper and lemon juice
3.Shape, roll in crumbs, then in egg and again in crumbs
4.In a frying pan, fry in hot deep fat (380° F.) 3 to 5 minutes
5.Drain
SERVING
6.Serve with a sauce of your choice or with salads
