Surprise Ham Croquettes

Ingredients
  Potatoes 2 Cup (32 tbs), mashed
  Fat 1 Tablespoon, melted
  Egg yolks 3
  Cayenne To Taste (As Required)
  Cooked ham 1 Cup (16 tbs), chopped
  Crumbs 1 Cup (16 tbs) (As Required)
  Egg 1 (As Required)
Directions

MAKING
1.In a bowl, mix potatoes, fat, 2 egg yolks and cayenne
2.Beat until smooth, then cool
3.Mix ham with remaining yolk and cook until mixture thickens
4.Chill
5.Take a large tablespoon of the potato mixture, make a hole in center, put a large teaspoon of the chopped ham inside, close the hole and form a ball
6.Roll in crumbs, then in egg, again in crumbs and fry in hot deep fat (380° F.) for 5 minutes
7.Drain
SERVING
8.Serve with a sauce of your choice
