Rice Croquettes

Ingredients
  Butter 3 Tablespoon
  Flour 3 Tablespoon
  Salt 1⁄2 Teaspoon
  Milk 1 Cup (16 tbs)
  Minced parsley 1 Tablespoon
  Paprika 1⁄4 Teaspoon
  Cooked rice 1 1⁄2 Cup (24 tbs)
  Fine dry crumbs 1⁄2 Cup (8 tbs) (adjust quantity as needed)
  Egg 1 , slightly beaten
  Tart red jelly 1⁄4 Cup (4 tbs) (adjust quantity as needed)
Directions

MAKING
1.In a saucepan, melt butter, blend in flour and salt and add milk and parsley
2.Cook until thickened
3.Now add paprika and rice
4.Let it stand to cool
5.Shape into cones and make a depression in top
6.Roll in crumbs, in egg and again in crumbs
7.In a frying pan, fry in hot deep fat (375° F.) until brown
8.Drain on absorbent paper and place spoonful of red jelly in top
SERVING
9.Serve with a sauce of your choice
