Breaded Veal Cutlets
|Egg||1 , beaten|
|Veal cutlets||1 Pound|
|Fine bread crumbs||1 Cup (16 tbs)|
Beat egg slightly, add water, and dip cutlets into this mixture, then into bread crumbs.
Heat lard and brown cutlets on both sides, seasoning with salt and pepper.
Keep at moderate temperature until done, turning frequently.
