Ham Croquettes

Ingredients
  Butter/Margarine 3 Tablespoon
  All purpose flour 3 Tablespoon
  Milk 3⁄4 Cup (12 tbs)
  Ground fully cooked ham 10 Ounce (2 Cups)
  Instant minced onion 1 Teaspoon
  Dry mustard 1⁄2 Teaspoon
  Fine dry bread crumbs 3⁄4 Cup (12 tbs)
  Egg 1 , beaten
  Fat 2 Cup (32 tbs) (For Deep Frying)
  Frozen peas in cream sauce 8 Ounce (1 Package)
Directions

Advance preparation:
In saucepan melt butter; blend in flour.
Add milk; cook and stir till thickened and bubbly.
Remove from heat; stir in ham, onion, and dry mustard.
Cover; refrigerate up to 24 hours.

Before serving:
Shape ham mixture into 8 to 10 balls.
Roll in crumbs.
Shape into cones, handling lightly.
Combine egg and 2 tablespoons water.
Dip ham cones into egg mixture.
Roll in crumbs again.
Fry in deep hot fat (375°) till heated through, about 2 minutes.
Drain.
Meanwhile, cook peas according to package directions.
Serve over croquettes.
Makes 4 or 5 servings.
