Fish Croquettes Gratines A La Parisienne

Ingredients
  Cooked fish fillets 500 Gram
  Cooking oil 1 Tablespoon
  Fresh bread crumbs 1 Cup (16 tbs)
  Eggs 4
  Fresh cream 3 Tablespoon
  Parsley sprigs 3
  Lemon 1⁄2 , juiced
  Salt To Taste
  Freshly ground black pepper To Taste
  Water 2 Tablespoon
  Flour 1⁄2 Cup (8 tbs)
Directions

Place all ingredients except 1/2 cup of breadcrumbs, 2 eggs and the cooking oil in the work bowl .and process until fine in texture.
Taste and adjust seasoning.
Combine 2 eggs with 2-3 tablespoons of water, and on two separate plates place the flour and the breadcrumbs.
Form the fish mixture into croquettes 5 cm (2 in) long and 2 1/2 cm (1 in) in diameter.
First roll it in the flour, then dip it in the egg water mixture and finally coat it in breadcrumbs.
Heat the oil to about 190°C (375°F) and cook the croquettes until golden brown.
