Poached Tuna Rolls With Garlic Mayonnaise
|Canned tuna||9 1⁄4 Ounce, drained, flaked (Solid Packed, 1 Can Of 9.25 Ounce)|
|Anchovies||3 , minced|
|Eggs||2 , lightly beaten|
|Bread crumbs||1 Cup (16 tbs)|
|Tomato||1 , thinly sliced|
|Onion||1 , thinly sliced|
|Cucumber||1 , thinly sliced|
|Garlic mayonnaise||1 Tablespoon|
Combine tuna with anchovies.
Add pepper and taste before adding salt.
Mix in eggs and enough bread crumbs to make a paste firm enough to shape into four 1 1/2 inch thick rolls.
Wrap rolls tightly in cheesecloth.
Tie at both ends.
Put into boiling salted water to cover.
Reduce heat and simmer 20 minutes.
Remove from water.
Slice rolls and garnish with tomato, onion, and cucumber.
Serve with Garlic Mayonnaise.
