Old-Fashioned Jelly Roll
|Sugar||1 Cup (16 tbs)|
|Cold water||1⁄4 Cup (4 tbs)|
|Vanilla extract||1 Teaspoon|
|Sifted flour||3⁄4 Cup (12 tbs)|
|Baking powder||2 Teaspoon|
|Jelly||1⁄2 Cup (8 tbs) (Your Favorite Jelly, Or As Required)|
Break the eggs into a mixing bowl and beat until light.
Add the sugar gradually, continuing to beat until light and fluffy.
Add the water and vanilla; stir until smooth.
Stir in the flour, baking powder and salt a little at a time.
Pour the batter into a waxed paper lined jelly roll pan.
Bake at 375 degrees for 12 to 15 minute or until set.
Dust a clean kitchen towel with confectioners' sugar.
Invert the cake onto the towel.
Remove the waxed paper and trim the edges.
Spread jelly to the edge.
Roll the warm cake as for a jelly roll from the short side and wrap in the towel.
Place on a wire rack to cool.
