Danes Roll Cabbage

Ingredients
  Cabbage 1 Large
  Salt 1⁄2 Teaspoon
  Boiling water 1⁄2 Teaspoon
  Butter/Margarine 2 Tablespoon
  Chopped onion 1⁄2 Cup (8 tbs)
  Chopped celery 1⁄4 Cup (4 tbs)
  Coarse shredded carrot 1
  Lean ground beef 1 Pound
  Danish cheese 1⁄4 Pound (Harvarti Or Tilston, Can Be Found At Deli)
  Bottled chili sauce 1⁄2 Cup (8 tbs)
  Beer 1 Cup (16 tbs) (At Room Temperature)
Directions

Rinse 1 medium size cabbage & remove any outer marred leaves.
Cut 1/2" slice off bottom to make separating leaves easy.
Place cabbage in large kettle.
Add 1/2 tsp.salt & boiling water to cover half way.
Bring to a boil, cooking and lifting cabbage out of the water to remove leaves.
Continue until all leaves are separated.
Cut off heavy ribs with a sharp knife.
Arrange large leaves and place smaller leaves on top.
Prepare the stuffing.
Melt butter or margarine in a skillet.
Add finely chopped onion, finely diced celery and coarsely shredded carrot.
Saute' until onion is golden; push to one side of pan and add 1 lb.lean ground beef.
Cook, uncovered, stirring oc-casionally, until meat is no longer red, about 5 minutes.
Mix in the sauteed vegetables; season with salt and pepper to taste.
Sprinkle a little less than 1/2 lb. Danish Harvarti or Tilston cheese on cabbage leaves.
Fill center of each cabbage serving with 1/2 cup or a little more of the meat mixture.
Fold 2 sides over stuffing and, starting at stem end, roll up.
Arrange the cabbage rolls in baking dish, seamside down.
Pour in 3/4 to 1 cup beer.
Cover dish tightly with lid or aluminum foil.
Bake at 350 degrees for 30 minutes.
Remove cover and spoon beer over the rolls.
Blend 1/2 cup chili sauce and 1/2 cup shredded cheese.
Spoon over top of each roll.
Return to oven and bake about 10 minutes, until cheese melts.
Ingredients depend on number of people to be served.
One cabbage and one pound of beef should feed 6 people.
Note: This is a great recipe to make a day or two ahead.
Store the wrapped cabbage rolls in refrigerator and assemble in casserole several hours before cooking.
The intermingling of flavors of vegetables, cheese and beer is unusually delightful.
