Ham Rolls

Ingredients
  Fresh mushrooms 1⁄2 Pound
  Lemon juice 1 Tablespoon
  Butter/Margarine 1 1⁄2 Tablespoon
  Onions 2 Small, chopped
  Salt To Taste
  Parsley 2 Tablespoon, chopped
  Black pepper To Taste
  Boiled ham slices 8
  Bacon strip 2
  Sour cream 1⁄2 Cup (8 tbs)
  Edam cheese 1⁄2 Pound, sliced
  Packaged bread crumbs 1 Tablespoon
Directions

Clean and slice mushrooms.
Sprinkle with a little of the lemon juice to prevent mushrooms from turning brown.Heat butter in saucepan.
Add onions; cook for 3 minutes.
Add mushrooms; season lightly with salt.
Cover; simmer for 10 minutes.
Stir in parsley; season with rest of lemon juice and freshly ground pepper to taste.
Spread mushroom mixture on ham slices; roll up jelly-roll fashion.
Dice bacon.
Cook in ovenproof dish 3 minutes.
Arrange ham rolls on top of cooked bacon, setting them close together.
Spread half of sour cream over rolls, top with cheese slices, and spread rest of sour cream over cheese.
Sprinkle with bread crumbs.
Bake in preheated 400°F toaster oven 20 minutes.
